This is a slow and tedious process. I can already feel it paying off though.
As for the interior, I fully plan on keeping the original bench seats as I like the idea of driving to our local drive-in theater and watching a movie with the kids and my wife. I will update some things throughout such as the radio (going classic look likely from Crutchfield.com http://www.crutchfield.com/shopsearch/classic_car_radio.html).
Aside from that, it'll look custom and clean. I'm not a fan of over the top gaudy colors so I will likely have some accents. But, nothing over the top.

Snapped two bolts from under the car to get the front seat out.

Back seat is a little dusty
Almost all of that brown is just dirt. Luckily close to no rust. Floor is very solid.
There's a lot of crap in the trunk. Found the broadcast sheet under the backseat.
After I figured out the windshield needed to be removed to get the dash out, that made things easier.
